The Seventh Sweet of Aristaeus

Well, Aristaeus has done it again. He's a mead brewer here in the upcountry of South Carolina, and the dude can brew some mead. He can do the cloyingly sweet stuff, but he tends to put out a dry, subtle, well-spiced product. This is his recipe blog. And here is his recipe for cyser, which is an apple juice mead.
